HAPPY ST. PATTY’S DAY EVERYONE! Ok, so these were absolutely fabulous. It was just a quick snack idea on Tuesday but it turned out to be a favorite Dukan Diet recipe for me. I made my own dressing, it took about 3 minutes, and I replaced the traditional sauerkraut with a thin slice of jicama. I do love my sauerkraut though. I was just in the mood for a sandwich and this was close enough. Hope you enjoy! I’ve never seen jicama really discussed on Dukan’s website but I looked up the nutritional info and it certainly fell in line with plenty other vegetables. If you’ve never tried it, it looks like a big potato, it’s more like an apple or celery root inside. It’s fabulous, kind of sweet, and full of water. Try it!! It’s fabulous in salads too. The corned beef I found at Trader Joe’s. It’s wonderful, low fat and is uncured. For those who don’t know, cured meat is horrible for you. It has nitrates and nitrites in them that causes cancer. Hot dogs are probably one of the worst culprits. Go for the uncured, your body will appreciate it–it’s worth it! REUBEN SANDWICHES Slice a jicama into 1/8-inch slices. Top with plenty of uncured Trader Joe’s corned beef and homemade dressing (some fat free or Dukan mayonnaise, finely diced gherkins or other sugar free pickles and a dab of tomato paste). Enjoy!!
